I LOVE to cook. Here, I will share recipes and ideas for delicious, healthy (and some unhealthy) recipes.
QUINOA RECIPES:
Quinoa Stuffing:
Cook quinoa as stated on box, use either vegetable or chicken broth
After it is cooked, stir in:
diced dried cranberries, chopped walnuts, pecans and almonds
thanksgiving type seasonings (thyme, rosemary, oregano)
We put this in halved and roasted acorn squash.
Quinoa Fruit Salad:
(I’ve also made this with couscous, good either way)
1 cup cooked quinoa
2 large oranges
1 T vegetable oil
1/2 tsp cinnamon
1 medium granny smith apple
1/2 cup diced dried apricots
1/2 cup dried cranberries
1/4 cup diced dates (optional)
1/4 cup thinly sliced green onions
1/4 cup sliced almonds
Juice oranges to get 3/4 cup orange juice
Dice apple
Mix all ingredients EXCEPT almonds
Chill for 1 hour
Top with almonds before serving
